1. 1/4 cup pearl tapioca
  2. 4 cups of milk
  3. 4 tbs corn meal
  4. 1/2 cup light molasses
  5. 1/2 cup brown sugar (or white)
  6. 1 egg
  7. 1 tsp. Salt
  8. 1 teaspoon ginger
  9. 1/2 tsp ci/li>
  • soaked tapioca overnight in 1 cup milk
  • add the other 3 cups of milk and scald the entire mixture
  • Blend in corn meal
  • Add to the hot milk and cook until it begins to thicken
  • Place into a well-greased baking dish (use butter for greasing)
  • Bake l hour in slow oven of 325 degrees
  • then stir in 1 cup top milk or thin cream
  • reduce temp to about 275, continue baking for 2 more hours

  • Serve this with hard sauce, not ice cream
