Time: 6 hours.

Sufficient for 5 or 6 persons.

Seasonable at any time.

  1. 1/2 lb. of fresh butter
  2. 1/2 lb. of powdered sugar
  3. 1/2 lb. of flour
  4. 1/4 lb. of currants
  5. 4 eggs
  1. Beat the butter to a thick cream
  2. Strew in, by degrees, the sugar
  3. Mix both these well together
  4. Dredge the flour in gradually
  5. Add the currants
  6. Moisten with the eggs, which should be well beaten
  7. Mix all the ingredients until they are well stirred
  8. Butter a mould that will hold the mixture exactly
  9. Tie it down with a cloth
  10. Put the pudding into boiling water
  11. Boil for 5 hours
  12. When turned out, strew some powdered sugar over it, and serve
