Time: 6 hours.

Sufficient for 5 or 6 persons.

Seasonable at any time.

Ingredients
  1. 1/2 lb. of fresh butter
  2. 1/2 lb. of powdered sugar
  3. 1/2 lb. of flour
  4. 1/4 lb. of currants
  5. 4 eggs
Directions
  • Beat the butter to a thick cream
  • Strew in, by degrees, the sugar
  • Mix both these well together
  • Dredge the flour in gradually
  • Add the currants
  • Moisten with the eggs, which should be well beaten
  • Mix all the ingredients until they are well stirred
  • Butter a mould that will hold the mixture exactly
  • Tie it down with a cloth
  • Put the pudding into boiling water
  • Boil for 5 hours
  • When turned out, strew some powdered sugar over it, and serve
