Time: 6 hours.

Seasonable all the year.

Sufficient for 10 persons.

  1. 4 lbs. of shin of beef
  2. 3 carrots
  3. 2 turnips
  4. a large sprig of thyme
  5. 2 onions
  6. 1 head of celery
  7. salt to taste
  8. pepper to taste
  9. 4 quarts water
  • Take the beef, cut off all the meat from the bone, in nice square pieces
  • Boil the bone for 4 hours
  • Strain the liquor, let it cool, and take off the fat
  • Put the pieces of meat in the cold liquor
  • Cut small the carrots, turnips, and celery
  • Chop the onions
  • Add vegetables with the thyme and seasoning to stock
  • Simmer till the meat is tender

  • If not brown enough, colour it with browning
