1. 1 lb. Knuckle or "worst part of a" neck of veal
  2. Water
  3. 1 Onion
  4. Whole pepper
  5. 6 Cloves
  6. Salt (pinch)
  7. Sweet herbs
  8. 1/2 nutmeg, sliced
  • To a quart of water, add onion, some pepper, cloves, salt, herbs, and nutmeg
  • Add veal and boil an hour
  • Strain off the liquor, and keep it for use.
