Should make three half-pints of broth.

Ingredients
  1. 1/2 lb small Eels
  2. 3 pints Water
  3. Parsley
  4. 1 sliced Onion
  5. a few Peppercorns
  6. Salt
Directions
  • Clean eels, and set them on with the water, some parsley, sliced onion, and pepper-corns
  • Let them simmer till the eels are broken, and the broth good
  • Add salt, and strain it off
