As a left-over dish, ingredients would vary depending upon what was actually left over, but would typically contain corned beef, turnips, carrots, potatoes, and beets (from which it gets its name)

Ingredients
  1. 24 ounces chopped corn beef
  2. 2 cups chopped beets
  3. 6 small to medium sized chopped boiled potatoes
  4. 4 large carrots (boiled)
  5. 1 large chopped turnip (boiled)
  6. ¼ cup cream
  7. 1 ½ teaspoon salt
  8. 2 Tablespoons minced onion
  9. 1 Tablespoon minced Parsley
  10. ¼ cup beet juice (added for extra coloring)
  11. 1/3 pound think sliced bacon (crackled and sprinkled on top)
Directions
  • Chop the left-over meat and vegetables and mix together
  • Moisten with a little milk or cream
  • Season to taste
  • Melt butter in an iron skillet, and press in the hash
  • Cook at low to medium heat, or bake in a 350 degree over about 40-45 minutes until nicely browned
