Yield: 2 loaves

  1. 1 3/4 c. flour
  2. 1 1/2 c. sugar
  3. 1 tsp. baking soda
  4. 1/4 tsp. baking powder
  5. 1 tsp. salt
  6. 1/2 tsp. nutmeg
  7. 1/2 tsp. allspice
  8. 1/2 tsp. ground cloves
  9. 1/2 tsp. cinnamon
  10. 1 c. canned pumpkin
  11. 1/2 c. vegetable oil
  12. 1/3 c. water
  13. 2 eggs
  1. Preheat oven to 350°F.
  2. Spray 2 loaf pans with nonstick spray and dust with flour. (Put a little bit of flour in the pan and tap it so that it covers all the nonstick. Dump out any flour that won't stick to the pan.)
  3. In a large bowl, sift together dry ingredients: flour, sugar, baking soda, baking powder, salt, nutmeg, allspice, cloves, cinnamon.
  4. Add pumpkin, oil, water, and eggs.
  5. Beat well, until batter is smooth.
  6. Pour batter into prepared loaf pans.
  7. Bake 1 hour, until bread tests done with a toothpick.
  8. Cool in pan 10 min., then turn out to cool completely on racks.
  9. When cool, cut into slices.
